How To Make The Perfect Apple Dumplings - Jelly Roll Style
My grandmother passed away several years ago, but my memories of baking with her will live in my heart forever. When I was in my early twenties, we spent an entire fall weekend baking some delicious apple dumplings. For the next 15 years, we would get together one weekend in October and spend time together baking dumplings, cakes and apple pies.
The following recipe is easy to make since it's made jelly-roll style. I like to make double batches of this recipe and freeze my baked second batch.
Nana's Apple Dumplings
Apples
5 large apples
cinnamon and sugar
Syrup
2 cups water
1 1/2 cups granulated sugar
1 tablespoon butter
Dough
2 cups flour
2 tablespoons granulated sugar
2 tablespoons butter
3 teaspoons baking powder
1 egg
6 tablespoons milk
In a large saucepan, combine all of the ingredients listed for the syrup. Bring to a boil and boil for 1 minute, let cool. In a large mixing bowl, combine the flour, sugar, butter and baking powder to make the dough. In a separate bowl combine the egg and milk together. Pour this mixture into the dough. Mix until well blended.
Make one big ball of dough and roll out onto a floured surface or a dough board, until it measures 1/4" thick. Peel and core apples and then cut into slices. Layer the slices over the dough surface. Sprinkle with cinnamon and sugar. Roll up the dough...jelly-roll style. Cut the roll into 1" sections. Pour the syrup mixture into a 13 x 9" jelly roll pan. Place the 1" sections into the syrup mixture. Bake in a preheated 350 degree oven for 30 minutes.
Serving - You can serve the apple dumplings warm from the oven or cold with milk poured over top.

Does anyone have a recipe for a coffee cake for a jelly roll pan?
I am looking for a good coffee cake recipe that is easy to make, but I want to use my jelly roll pan for it so that it will go a bit further.
I think I can use a regular recipe but I don't know how much batter is needed to fill the pan and the baking time.
Batter:
2 cups flour
1 cup sugar
1 teaspoon salt
3 teaspoons baking powder
2 eggs
2 tablespoons melted butter
1 cup milk
1 teaspoon vanilla
Topping:
6 tablespoons melted butter
1 cup flour
1 cup sugar
1 tablespoon cinnamon
Mix ingredients for Batter and put in a greased jelly roll pan.
Mix ingredients for Topping and crumble over batter. Bake 25 minutes at 350° Fahrenheit.
